When you unsubscribe, you just unsubscribe from the Steam Workshop page, right? In the initial post you said you also deleted the folders (this is not necessary and may cause issues). Just unsubscribe from the Workshop page and start the game afterwards.
A question: when you unsubscribe from a mod and then refresh the Steam Workshop page, does it show you're still subscribed?
No, I first unsubscribed and it was not deleted anyway, that's why I manually deleted it, every time I give it to subscribe or unsubscribe it happens as if it were fine, it unsubscribes and everything is perfect, but when I enter the game there is no mod, then I see the folder of the mods and there are none
