Can you make the vertical forest and the vertical farm have a lot less noise pollution? It seems wierd that inside a tower, there would be enormous amounts of noise coming from them in-game.

This is beautiful! Have you considered building vertical farms? Singapore for example has Sky Greens so its a real thing :)
