You can not play in the third person, steam servers,VERSUS MODE just in COOP mode

(unless you use some kind of modification in the game [HACK-bypass]) to use cvars that are not allowed in the game, but , that would cause VAC BAN :3

There addons in workshop to enable, the third person in the Copertaivo mode, or when you create your own server locally :D
