More specifically, I'd recommend cyn-cars. They're plenty of fun to drive and they handle quite well. Also, they look incredible. Probably the best looking addon cars ever made.
Myeh, it'd be pretty cool. (: But RIP potato computer full of addons. :l
Perhaps someone might eventually make a roleplay version of gm_fork, which would certainly include interiors.

It's not just you. Cars in Gmod feel really stiff, mostly Scars. If you want something less stiff you should check out simfphys.
100 sweps = minimum of 100 files, maximum can be 300 ( if using init, shared and cl_init ) or more files
300 vehicles ( typically 1 vehicle per file, sounds file, fix file ) 300 - 900 files
50 tools ( 1 file each ) 50 files
20 effects ( lets say those 100 sweps had custom effects ) 20 - 60 files or more
50 entities ( including nextbot, shop, plus more ) 50 - 150 or more files
