Heres an idea. You could create a version with 6 sinkholes placed at with 4 at equal intervals along the equator and with 2 at the poles. You could then place a cube with outward-facing gravity generators in the center and place more gravity generators as the shaft goes up, giving the planet gravity. You could then re-edit the planet and fill the holes, hiding the 'inner workings' to all but the luckiest of miners.
You might also want to undulate the basic surface, so it dosent look like the terrain details have been stuck onto a big generic sphere.
