I'm not sure since all of the addons have the cubemaps, I guess try uninstalling and reinstalling addons maybe? If not then maybe try downloading the addon with workshop downloader and putting the materials folder in the garrysmod game folder so the cubemaps are there at least. I know there are multiple people who've had the issue but idk what causes it or how to exactly fix it.

This isn't a 'frog villagers only' problem, but the ones with anything that shines (Ribbot) reflects a missing texture... How can I fix this?

I finally did a villager pack now that the humans are finished. I'll do goats next and I'm still deciding on the next options for species.
