There are several tutorials for Gem Editor in Youtube regarding about forming soldiers into squads.

I'm not sure, I don't really play CtA to be aware of its mechanics much. But I'm positive it has to do with human.inc files and the likes, and most likely will be hardcoded.

For those asking: I have the assumption that the sounds were likely from Old Boy's Battalion mod or Assault Contact 2. Since they are two major mods active when the videos were recorded.
