I tried a 15k star galaxy when testing this mod. It took 25 minutes to generate and was horribly misshapen, boxed into a square area:

Nice. work. Never realized how much I actually wanted this.

Half of me do want a full-size Elite galaxy in game, but we all know how impossible that is.

Generate a few galaxies; you should see a hell of a lot of star names you do not recognize as "normal" to see in Stellaris. If you see one of the "classic" E:D names, you know for sure it is working.
