Im not in KF2 modding anymore, that's pretty time wasting to do that, it's also a pain in the arse, not to tell about the animation replacement. There's a couple of guides how to do that.

Killing Floor 2 SDK and UMODEL, there's lot of guides, how to replace, reskin, make own and etc. but keep in mind, that if you edit the material file, you can't go online, only textures.
