Its gonna take some digging and like 20 different searches but you should find enough tutorials to answer your problems. Since the model already exist, this will end up being easier then you think, always is with source engine models, no matter how complicated.
Anyways, one major suggestion. Add some LODs to them, they lag like hell in game. If it comes with the model already, assign them to the LOD slot under skinned meshes. If you don't have LODs then you should create them, it's actually not that hard to do, Blender could help you make them.
