Long before there were decoration mods available I wanted something nice to plant near houses so I made this and it turned out that getting rid of the fences was necessary to make them small. Also really tiny fields can actually be more useful than you'd expect, although I'd save them for late game when you have more people than you know what to do with.
Can they be expanded in size to what is considered Normal Existing Farm and Orchard Sizes?

It changes all to fenceless. You can do any size field from 1 plant/tree on up to the game max.(although the tiniest you may have to build by hand). Making fields fenceless inproves productivity because farmers can take the shortest routes between field and well or barn or home. I also prefer the aesthetics.
