I found that in the dueling sections of the boss battles it's almost always better to just attack them and bait out the second block, if you block them again they're left open for 1-2 strikes. If you just react and let them do their red dodge based attack, you lost both time and potentially take heaps of damage. The hand is a good example, just keep hitting him and he'll always hit back with his shield (which you can just parry and then strike)
The off-camera thing is also used for spawning mines and drones, so running south tends to run into drones spawning right in front of you and much further away when running north.
I'm really not sure why you'd say something that is so completely false, differences are that his final phase requires more careful positioning to avoid one of his attacks, his waves he sends out with the paddle come out with more than 1 at a time, he dodges and parries far more often...
