Food is essential, but expires rather fast. Must be delivered as soon as possible. Sells for a good price almost everywhere.

High value Jewelry from different countries. Keep away from burglars

Medicines. Take only by prescription. Keep away from children.

Weapons and Ammo. Do not smoke nearby! prohibited in some cities.

Tip:
Always make sure you've filled your Coal tender before looking at loading Cargo. This is to make sure that your trains weight calculation doesn't miss the coal you'll require, otherwise your train could be too heavy to pull out of the station.
