To beat the bull you need to grab him by the horns and karate chop him on the head. To grab and chop press ↓↘→ + Y OR ↓↘→ + X

Just press "B" when the bull is close enough, You will kick him in the face and he turn around run and come back when he is close enough again hit B... It's that easy

Not sure but i remember when u do land the strike successfully u will automaticlly be facing him after each strike
