Simply hit ~ at the title screen to open the console, type in "god" (without quotation marks), hit enter and close the console again and start your game!

UPDATE:
Thanks to one of the dev's Vermeulen, if you right-click Apotheon in your Steam library, go to Properties>Set launch options, and add "-dev", then click OK.

After that, hitting ~ at any time in-game will open the console; not just at the title screen.

One question, what does "Gigantomachy" do? (Asking if it gets you into the giant mode just like in last boss.)

can confirm, console commands do not disable achievements.
