Don't be afraid to pause and switch bombs in the middle of a fight, I do this constantly, especially against high health monsters like Gargoyles.
But always try to get them into a 1v1 if you can

Igni and Quen are also very useful plus a mix of different bombs like Dancing star or Dragons Dream which do fire damage and burn their health down.
Samum is also great for fighting multiple enemies because you can attack one with the Axii blade combo while the other is blinded. You can also get a similar effect with Northern Wind by freezing them if you aim correctly.
Don't be afraid to pause and switch bombs in the middle of a fight, I do this constantly, especially against high health monsters like Gargoyles.
But always try to get them into a 1v1 if you can
