Windowed and Fullscreen mode
To switch between Fullscreen and Windowed mode use the shortcut of keys ALT+Enter.
Your game will be automatically in Windowed mode upon first launch.

Graphics
There are two graphic options that can be toggled, the old one from 1995 and a newer one with more polished Anti Aliasing:

1) On a Mac/OS X you need to use the Task Bar at the top of the desktop screen to Save & Load a game - keyboard shortcuts don't seem to work."
2) On a Windows use the shortcut ALT+S.
Menu/Settings
The Settings and the menu can be found on the key F1 on the keyboard.
It will not always work, for that as some people pointed out, it's a good idea to switch between Fullscreen mode to Windowed and try to right click on the game window to switch it manually, or to change the graphics with ALT+S.
It seems to be a bug that can be avoided (and if any others appear) specifically through applying these measures.

If you're still unable to access the save/settings menu, what finally worked for me was CTRL+F1.

To access the Menu (F1) if it doesn't work, simply hold the Alt key for a few seconds first. I improved the technique from the VulpusAlbus post. cheers

Kinda goofy to have to depend on the button shortcuts, but thanks for the head's up. I button mashed until I found F5 to open the Save/ Settings menu on mine...

New ScummVM version has some good fixes by the way.

It ook some time, but I found a workaround for disabled F keys that works for me 100%.

1. Alt-Tab out of the game.
2. From the desktop do the following:
3. Hold and press Alt, don't release it yet
4. Press Tab once, so that windows list appears
5. Mouse click on the Dig window
6. After it switches to the game and it goes to fullscreen release Alt.
All the keys should be working now.

PS. Anyway save often. With F keys not working you can't save your progress :(

Sounds fishy to me and of more effort than it's worth than those simple key shortcuts above.
I'd rather use ScummVM for things that cannot be launched otherwise.

You couldn’t use ScummVM 1.6.0 with Steam versions of LucasArts games, but now you can, because it’s a new feature in ScummVM 1.7.0. From changelog: Added support for the Steam versions of Indiana Jones and the Last
Crusade, Indiana Jones and the Fate of Atlantis, Loom and The Dig. Both
the Windows and the Macintosh versions are supported.
