"This is just driving me nuts. The physics of objects when loading a truck with items is all over the place. Look at how the drum is angled out. It wasn't swinging. It was static.

The mess in the bed of the truck is the result of those stupid drums jiggling. I'd loaded everything but those drums without much issue. As soon as I loaded them, they jiggled, bounced around and started knocking things over and off the truck bed.

Even without the drums, when I tried to reload the truck (using the fork lift since it's faster), the pallets end up dug into the ground (I had to restart the game to reset them) or in one case the physics had a pallet stick to the forklift rather than the truck bed, even with the fork angled down to allow it to fall off. I then tried using Y to close the truck sides (so the pallets could be slid back into the middle as they were hanging off after being dragged), the pallet ended up at a 45 degree angle, burried in the truck bed model. Couldn't reset it or grab it...merged together like some weird Sci-Fi movie.

For the most part, this is the core of this game and it's so damned finnicky. I don't know if it's the last update to the physics engine or if it was like that but it'd be nice to get something in place to help."

By the way, the attach cargo thing definitely helps, though you'll still want to organize your truckloads carefully. Those rolls jiggle around even when attached and cargo can sort of "bounce" after detaching in general which can cause things to topple and make a mess. I managed to get this load all sorted out (though I ended up putting the rolls in a second truck because once I attached one roll and placed another one, it wouldn't allow me to detach the previous roll saying it was improperly loaded...ugh).

I'd considered that but I figured as soon as I unlocked them it would go bonkers. I'll probably try it though.

One possible solution would be to to load a few items and then lock them down and repeat. That way any problems hopefully won't affect the stuff you've already loaded.
