Introduction
In the game files there's a folder called "data" which contains .json text files with details about characters, events, items etc.

I'm not a game dev but I'm assuming it's mostly for coding purposes so that text displays properly, items have the correct stats etc. but the interesting thing is that there are some stats that are not explicitely stated in the game such as enemies hp and how each skill calculates the damage it's gonna inflict to the target.

Since a lot of this info is already available on the Fandom [look-outside.fandom.com] and Miraheze [lookoutside.miraheze.org] wikis as well as Llamakazi's comprehensive Look Outside guide (which you should really check out for just about anything you need to know about the game), I'll be focusing on stats related to weapons that I don't see available at the moment of writing which are a stat called "fragile" (which I'm assuming is the weapon's break chance after every hit), as well as their "reach" (pretty self-explanatory) and "safe hits" (number of first hits where a weapon's break chance is divided by 10 as explained in version 1.03 patch notes).

The break chance might not be static and might increase with some factors or over time so take all this info with a grain of salt.
Ranged weapons are not included because they can never break, even if you use them as melee weapons.

For posterity, this refers to version 1.05 and I have no clue if I'll update this guide with upcoming patches.
If I don't, feel free to look at the .json files yourself.
I'm pretty sure you can open them with any text editor, I used Notepad and it worked just fine.
