Difficulty
Changing the difficulty does not appear to effect the overall score available for a level

Customers
Appearance
Each level seems to have a predefined list of customers and how much they'll order
As you'll see in the next section that's everything you need to calculate their value

What changes each run is their order of appearance and what dishes they'll order

There can also be restrictions on what customers can order on a per level basis
For example, no customer on 2-10 orders Mooncakes despite it being cook-able

Value
3 things effect the value of a customer
1. The customer's Tip value (available in the game's Guidebook)
2. The number of Dishes
3. If the restaurant has an upgrade that improves tips (Mexican Banner, Korean Exhaust, Indonesian banner)

Equation without upgrade:
(Tip + Dishes) x 10

Equation with upgrade:
(Tip + Dishes) x 10 + Tip x 2

For example, a Regular has a Tip value of 3
If we give them 2 Dishes:
(3 + 2) x 10 = 50

If you have the Banner or Exhaust upgrade:
50 + 3 x 2 = 56

Notice that the upgrade bonus isn't effected by the amount of Dishes
So the Regular will always give a bonus of 6 on top of the usual amount

Challenges
Interaction
Some challenges require you interact with someone/something x amount of times
If you're serving someone its usually worth 10 per dish
Otherwise it's some flat amount per interaction

These will wait till the full challenge is complete before giving a final bonus

Requirement
Some challenges require you to Not do something
For example:
- Don't have same dish on tray!
- Don't burn any dish!

These will wait till everyone is served before paying 50

Limitation
Some challenges will add limitations
For example:
- You can't see customer patience!
- This level is already hard!

These do not add to the score

@Secanho I got it as I was playing.
However you could probably use Endless mode to get all of the dishes.
You can make all the settings easy, unlock upgrades, and have only easy customers.
You can also return to settings as you serve dishes and remove those dishes until you've served everything.
Unfortunately I don't know of any way to know which dish you're missing
