The fastest way to earn the achievement is right before finishing Road to Elite.

On the results screen, wait for the red circle to stop spinning. This indicates that the completion has been registered. Once it stops, close the game immediately.

When you reopen the game, it will let you view the results again and count the completion once more. Repeat this process until you unlock the achievement.
