So far I've found 4 exhibits for basegame and one more for Explorer Edition that can't be obtained by simply following the quests and sending out normal expeditions.

If anyone has found any more/had different experiences please let me know and I'll add them to this guide.

nb - I haven't included activated anomalies or custom contraptions on this list. I have made a guide to activating the anomalies if you're looking for those

How to Obtain

Jasmine Album

Received from Jasmine Odessy after impressing her during her visit

She judges your museum based on the Decoration of Exhibits, the Buzz of Exhibits, and the Quality of Exhibits. Also ensure the Museum is clean of rubbish and your Exhibits are well maintained.

Roderick Bust

Received from Roderick Cushion after impressing him during his visit

He judges your museum based on the Buzz of Exhibits and Quality of Exhibits. Also ensure the Museum is clean of rubbish and your Exhibits are well maintained.

Penny Pincher

Found during events that can occur on expeditions:

Someone offers to sell you the 'real' exhibit after claiming yours is fake: Pay $2000 and receive the exhibit.
Coming across an abandoned village: go to the village (this might be variable, as I've gone to the village and found nothing, but others have found the exhibit)

Lantern Fish

Find a Frozen Lantern Fish from the Deep Depths (Two Point Sea) then allow it to melt - they die very quickly without water so be prepared to put them into your inventory as soon as the ice melts

Temple Troll

Only available if you have the Explorer Edition - Complete the Plywood Studios challenge map, then send an expedition to the Troll Temple (the Bone Belt)

@fetefatale - I have updated the guide with some info on how to impress Jasmine and Roderick. When I know more about the exact mechanics I will update with additional information.
