Servers arent' empty, but the big tribes are usually active on one server in a cluster, and most players congregate there because trades are easier on official. The Center is usually a solid choice on most clusters, and there is also more temporary faster paced servers in PVP clusters, like Arkpocalypse. It's an immersive life sim disguised as an explorer / builder on official, and a faster paced game on single player settings, so the key is really just figuring out if the pace you progress vibes with you, and if you want to be social or not. Discord helps a lot if you want to be social, and expect to have a hard time if you aren't open to Discord, because that's where people post locs of public use crafting stations, replicators, etc, and have trade channels where players who aren't online check, to see if there is any request they want to follow up on.
