If you have no route to escape and it's autumn, you can target the wolves with the highest flight meter (Yellow bar) or target the ones with a small dot on the Fight/Flight meter. These are most likely wounded wolves/Young Hunters, so you can easily scare them off and make every attacker flee, or get violent and kill them, making the others retreat.

Running in water is also a good way to escape, because they can't bite you when you are in deep water.
