Gameplay basics
Note: this guide is deprecated and many aspects have changed. But it can give you some first ideas.

You get money by selling your beer/wine/spirits. If the customer is satisfied you also get reputation. The more reputation level you have, the more customers are attracted. You want many customers to be profitable so you should raise you reputation quickly.
There are 3 sorts of beer: economical, medium, premium.

The reputation system:
  • +5 rep when a customer enters your pub and you have a clean pub
  • +2 rep each for a new ceiling, floor, walls (max +6)
  • +5 rep when serving the ordered drink
  • +5 rep when your prices are cheap
  • +/- 0 rep when you have medium prices
  • +/-0 rep when serving not the ordered drink but one with highter quality (i.e. economic ordered and you serve medium/premium
  • -5 rep when you are expensive
  • -5 rep when you serve the wrong drink in the same quality category
  • -15 rep when you are very expensive

So the most reputation you can gain from beginning on would be 5+2+2+2+5+5=21 rep. The higher you pub level, the more expensive you can go. At the beginning 150% price means it is OK and it is +/- 0. Reaching level 10 you are cheap at 150%. It increases every 10 pub levels. The higher your level the more customers you get.
First things first: your pub and setup
First you should clean up the pub at all. Then get your walls, ceiling and walls painted with $5 expensive ones. Choose what you want. This will give an extra +6 reputation for each pub entering customer. So on a clean pub you have +11 rep. Then order some economic beer crates and also draft beer (I choose buyneken) and set the overall price level to 150%.

With this setting you quickly gain reputation and also won't make a too big loss at the beginning. It is getting better with each pub level you gain.

Then get 4 round tables and 8 chairs and place them with a bit of distance to the walls and to each other so the customers can walk around them and get a seat and more important order new beer or leave to make place for new customers.

Don't close the pub when you are able to. Wait until the last customer is gone! He/she might order another beer multiple times.
Serving patreons
If a customer orders a premium draft/bottle and you don't have it: send him/her away so you won't get rep penalty and make place for another customer.

The first goal should be to get all taps with different beer. Lennysberg is also pretty good as soon as you can affort it.

You should only fill in 400ml. This saves you 20% of beer and therefore invest. If it is lower than 400ml it is not accepted. If it is a bit highter, no problem!

Prepare you beer. The faster you serve customers the faster they go and make place for new customers where you gain again the basic rep of +11 and can sell more. So at the beginning make 6 costas and 4 buyneken. If you make too much don't worry. As of now it won't loose quality and on the next day it is where you left it. Personally I place costas right of the taps, buyneken left of it and serve what is ordered. If someone wanna have another economic draft like stralis and you don't have it, just serve buyneken. You won't get the +5 bonus for serving the right drink but you won't loose rep and get the higher price so making profit.

For the first 3 days you could also stay at 100% price to boost rep gain. But that's optional. Around pub level of 8 you make very decent profit.

Keep buying new keg's if you can affort them to serve the right drinks. Also you can sell your beer license or buy beer crates to have the bottles if ordered. I personally buy crates and serve bottles too.

When a keg is empty, you should have some pints ready on your hand and have time to order a new one. Throw the empty keg into the recycle bin outside your pub on left side.

Keep in mind to clean the tables and also the dirt regulary to gain the +5 rep and not get -1 for "almost clean" or even worse when it is dirty.
Expansion number 1
When you reach level 5, you are able to hire a barkeeper. But don't do it! The fill the pints to 500ml and you loose 20% of profit. Wait until you are level 10 and have all taps with different keg's and also have your first premium beers. At level 10 you can increase price to 200%. Or if money is a problem 250% and you even get +11rep for each customer when serving the right drink (+5 for right drink -5 for beeing expensive).
Expansion #2: multiple keg's
If you have more taps and want to have more than 1 keg per beer you can do so.

Important!
When you have multiple keg's you have also multiple tip beer choices. So if you have 2 costas and you right click on the tab to change beer you have 2 costa choices. One for the first keg and one for the second keg. Keep remembering this! So if you use multiple keg's of one sort, use 1 tap for keg 1 and 1 tap for the other keg so when reaching first costa right click once more to get the second keg on the second tap.
There are 5 drafts ingame so you need 10 taps to have 2 keg's with each sort. But one bar with taps has 4 taps so you have at the end 3*4=12 taps. More than you need but what has to be done has to be done, right?. :-D
Expansion #3: hiring stuff and new licenses
The first barkeeper should be hired at level 8+. Yes you loose some profit but at pub level 8 and above you should still make good money as you have more customers coming in.
end goal
You should aim to have 12 taps, all 5 drafts with 2 kegs each and every bottle of beer. Buy the large modern refrigator not the old one and fill 2 places with one sort of beer.

You need 3 barkeepers and maybe one refiller if you don't want to make it by yourself. Then if you have plenty of money you should buy the spirit license and get a big board and fill each place with one sort of spirit. Keep in mind, patreons will "block" the barkeeper as they order multiple shots. Then they will leave your pub when their destination alcohol level is reached. But you earn a good profit. The barkeeper first get a glass and bring it to the customer, then go back and get the spirit and fill the glass up again and again until the customer has enough.

The last and most expensive but most profitable one would be wine. Also the barkeeper get's a glass and then afterwards the wine. So takes longer than beer. But the customer sit's down on a table and will order more beer/spirits/wine when finished.

You get more people as you gain reputation. So first goal is to make rep to get more people and more money.

There is no edit function to comments. :-(
Did you saved and left the game? Then this is intenionally as it was more a thing of bug using no pints aren't saved at all. But doesn't matter as this is a single player game only and using bugs won't hurt other players.

Good catch! Thank you. This might have changed with latest update. Will review this guide after doing some other work.

I think some of this may have changed. As i left a pint on the bar and came back the next day and it had gone.
