During the development of FlatOut 2, Bugbear actually had plans for including winter tracks into the game just like what the first FlatOut had but sadly didn't have time to implement them and was cut. However the code still remains and here footage of it working in FlatOut 1.

More interestingly, the settings offer much better physics and allowing the cars to have better overall grip. Note the speed at which the Thunderbolt is going and how easy it is to maintain control of the car. In some laps certain turns could not be possible on the original snow and ice settings, so seeing what content was planned for FlatOut 2 that sadly did make it into the final game would have made it into a even better FlatOut.
