5-Way and 7-Way Symmetry
For 5-way symmetry, start with a Cubic Octagonal Strut in 6-way symmetry.

Open the Tweakables panel and select "Remove From Symmetry".

As an example, I'll attach 5 SRBs. Take a radial decoupler and hover over one of the remaining struts, then attach it to the core stage.

All that's left is the boosters.

Same idea for 7-way, just start with 8-way instead.

9+-Way Symmetry
For this example I'll add 20 Sepratrons to a Mun lander using compound symmetry. Again, start with a Cubic Octagonal Strut, but just place one for now. Take another strut and attach it to the first with 3-way symmetry.

Pick up the first strut and reattach it with 8-way symmetry.

Take a Sepratron and hover over the 3-way struts, then place it on the lander. The staging stack should display the Sepratron with 24-way symmetry.

Pick up the Sepratron and press [Shift+X] four times, then reattach it. The stack should now display the Sepratron with 20-way symmetry.

The same procedure applies for other quantities. Use compound symmetry to obtain the closest multiple greater than your target, then trim the excess. Note that [X] without [Shift] will reset to 1-way.
