How To Get Rex
Rex can be found on the Planet Demodium which is a part of the free DLC. You have to get all the stars and then build the bridge on the last island. As seen in the screenshot below.
After that you wait until he flies in front and you pick him up as seen in the screenshot below.

You get to the island by boat, one location is on the starting island on the edge of the island by the sword and pickaxe upgrade areas. Here is a picture to help
