Only the first and last challenges are set as such. Otherwise the order of challenges is random.
If you want a different challenge on a day you can simply reload a save point made just before the start of a new day.

Sets: You obtain the seventh piece of a set as a reward for collecting the other six pieces. With that you can obtain a full set in one day if you choose to focus on one character.

Tip: To get all of the outfits you can either do two full playthroughs or make a save on the last day and reload picking a different character to complete each time until you have them all.
If you reload the reward choice after completing a challenge the options will change, so you can also simply reload until you have completed both outfits. I would recommend doing this with a save on the last day as you will have fewer options in total to go through, if you decide to gather the last pieces this way.

Note: If an achievement in this section doesn't pop up right away, either complete the game (only works for the first time) or gather one piece of clothing of that set again and it should trigger the achievement.

If you answer "No" at the end of the first day Ashor will give you valuable advice.

Tip: Make sure you don't accidentally wear anything that pulls your score into the opposite direction. For example in the case of the first challenge that would be Cute and Trendy. Resetting your entire outfit every round makes this easy.

Office Lady
Get 3 Stars for the "Office Lady" challenge.
Maelsol is a good choice to start out with. Her Top and Shoes in combination with the clothes you have from the beginning will easily give you a high enough score.

Party DJ
Get 3 Stars for the "Party DJ" challenge.
Saeva can be a good help for this one. Though you can't go wrong with Ashor either.

Streamer
Get 3 Stars for the "Streamer" challenge.
Effera seems like an obvious choice for this one. Loye would a strong option as well. Interestingly Ima is also good for this one.

Heatwave
Get 3 Stars for the "Heatwave" challenge.
Reira is the definitive choice here. It's one of the few outfits that can net you a perfect score all by itself.

Enjoying nature
Get 3 Stars for the "Enjoying nature" challenge.
Sed is the go-to here. Though to get all three stars you still need to use some other pieces, which you should already have. Tiss works also quite well for this.

Snuggled up
Get 3 Stars for the "Snuggled up" challenge.
Diven is another obvious choice. Almost a perfect score, you just need to add the twintail hairstyle you have from the start.

Celebration
Get 3 Stars for the "Celebration" challenge.
You need 13 points in Fancy for this one. If you have Maelsol's set this should be achievable in combination with the starter clothes.
