"Here is how to make a really good fruit tart in just about an hour, with 10 minutes of work:

Before you get to work, heat oven to 175 C.

Batter for the sponge cake base:

* 3 Eggs
* 3 spoons of Xylit, which is a sugar replacement, or you can use sugar
* 6 spoons of flour
* 6 spoons of vegetable oil
* 1 sachet of vanilla sugar or vanilla powder, what have you
* 1 sachet of baking soda

Put flour and baking soda into an extra bowl, mix. Add eggs and sweetener to a big bowl and start mixing it with a mixer.
Wait until it gains volume. Slowly add the oil. After that, add the flour with the baking soda and mix until everything is smooth.
You can beat the egg whites separately, but this works without just as well. Put into a tray, bake for 20 minutes.
Let cool before you add the frosting later. 20 Minutes should be enough. Then pull the base onto a plate.

Frosting:

* 300 g mascarpone
* 2 spoons milk
* 200 g Heave Cream
* Vanilla
* Optional: Sugar

First, put the heavy cream into a high container and mix that first. Once it is solid and creamy, you can start mixing the mascarpone in an extra bowl, add some milk and vanilla/sugar and whisk it until it is a nice cream. It is totally up to you how much vanilla or sugar you put into this, I leave the sugar out. Makes it a less sweet alternative. I think the fruit we are going to add provides enough sweetness. Have the courage for less sugar.
Once that is mixed, put the cream into the bowl and slowly whisk it in.

Fruit:

You can use any fruit. I have used about 500 g of blueberries. I have put half into the frosting and half on top as decoration.
Smear the frosting onto the base and put the fruit on top. Done.

Refrigerate the cake before you serve it. Best time to eat it is a day later.
