Thought I'd add a mini guide on the postage stamps seeing as there wasn't one...

Unfortunately I only thought about doing this after I'd already collected them so I'm not able to show screenshots of where they spawned, but I've given approximate locations

I haven't worked out the spawning rules, a couple only appeared in later runs even though I had unlocked the countries before, so I think they only appear either once a country has been completed, or (in the case of Australia) when certain places are connected to certain other places - I'll leave that for more intelligent people to work out... but hopefully this will help!

The Mount Everest one is gettable through either China or Nepal. Also, Coral_Saw is right. It takes 20-ish minutes of game time (10 if you're using 2x speed, of course) for a stamp to spawn. I'm pretty sure you just need to have one of the valid countries unlocked and nothing else matters, but it's possible that some of them have more specific needs or city unlocks.

Hello! I'm pretty sure postage stamps spawn around 20 minutes, I only know that information because of my scenarios. Might be false though

I had two postage stamps in different locations than those given in the guide:
"1 - Congo River" in Congo, not Democratic Republic of the Congo - https://imgur.com/mJkQ61i
"4 - Sahara Desert" in Algeria, not Egypt/Libya - https://imgur.com/hY4jDlk
