This is how its done
navigate to your main steam folder (not the one where your games installed) C:\Program Files (x86)\Steam\userdata\your steam number\234080 (the games store number)
Go into offline mode in steam>offlien mode
delete all the files
Launch the game,close it. Go back online just like you went offline
launch game and choose local save when it says theirs a steam cloud conflict.
BAM your old save is gone.

You can also go back to the map screen and redo levels you've already cleared. I learned this today after struggling to erase my saves to restart fresh.
