1] Right click on game setting and select "check for patch on game load only", this way you can always say no to new patch,
Also i would recommend to launch the game directly from its folder instead of steam, at least for me it doesn't check for new patch this way and game launched fine.

2] Open Steam console: in windows keyboard WIN+R and type steam://open/console
This will open steam console

3] In the console type : download_depot 1501750 1501751 7529610292237042253
This will download the previous version
WAIT for when it actually say download finished, it wont say anything during download, "feels" like download is stuck, but it isnt, its 32Gb

4] when its done it will give you the save path for the files like this:
C:\Program Files (x86)\Steam\steamapps\content\app_1501750\depot_1501751

5] move/copy all the downloaded files and overwrite the game files

6] PROFIT
