The trick you described is nowhere near "infinite", since you could still go below the required rings threshold to do the transformation when going into Super Sonic and not be able to perform the transformation again.
If you have 60 rings upon transformation, then you've only got 60 seconds to keep up the transformation. EVEN IF you manage to not lose any rings, it'll still wear off eventually and you'll be unable to go into super mode again as soon as you cancel the transformation on rings the threshold.
In other words, not 'infinite'.
Also, if you cancel the transformation with less than 50 rings, you can't go back to super sonic until you get it all back to 50. Example: going back to normal mode during a boss fight when you have less than 50 rings will leave you without any way to transform back.
