@Domaik Kerbal Space Program. If you're looking for an actual space sim. It has zero story, but it allows the freedom you described. And with mods, it can look better than AAA games. Just DON'T get KSP 2. It's been abandoned. KSP 1 still has a very active modding community though.

@Domaik No loading screens definitely helps to keep the immersion, but at what cost? Do you want your game to look like No Man's Sky or Minecraft?:fear:

This game ruined other games for me. Nothing comes close to what this game is. Not only that, it also is (in my opinion) the best space game in terms of freedom. you can walk around a planet, get into your ship, take off and land elsewhere and then get off and go back to exploring on foot. all without loading screens. find my another space game that allows you to do that.
