Apparently there was an update before I started playing that changed the pricing of processed goods because I find fermenting is by far the best way to make quick easy money (until pickling, which is less easy due to multiple steps but still pretty easy).
For example, take a Peludo:
Base price: 67
Dried: 107
Smoked: 134
Fermented: 201
Pickled: 298
Smoking is still great very early game and has an advantage of being quicker, but fermenting has carried me through since getting it until I got pickling, and I still use it frequently.
