If you want a good rule of thumb to get 90+% success:
Easy targets: use 3 dice
Medium targets: 5 dice
Hard targets: 7 dice.
Personally, if I don't have enough dice, I just leave and come back when I have more.
Or if it's not that important, I'll use 3 and hope for the best.

Hoping for the best of multiple high possibilities.

These may vary but you get the idea. It's not just a binary outcome, there are "levels" of success:
