Intro
Firstly, Warning/Heads up:
!! This data may be incomplete! Refer below to see if I have update the data to the current version.

The data is accurate for the following updates:
  • ✅Launch
  • ✅Update 1.0.10
  • ✅Bounty Update
  • ⬛future updates???

(✅complete, ➖partial, ⬛not started)

I work on the items from the recent updates as they come out and would still like to play at my own pace. I update the spreadsheet as I find new items. Items that I have at least one of and don't know the variations to do have the right number of variations, but their variation value is set to "??". Please do not tell me what items I am missing if I am still working through an update! I don't want to get spoiled. If you want to see the graphs with all the items you have, "fork" (copy) the document on Observable and create your own spreadsheet. (There is a link at the bottom of this page for a source for how to link a google sheet.)

Secondly, I created the original version of this on Observable[observablehq.com]. I copied it over to here. If there's any weird references to things that don't exist, I probably just forgot to remove them.
About the Data
❗❗ You can skip this part if you just want to see the pretty graphs :)❗❗

Data Gathering + Entry
(Note this section has a table attached to it on the original website. I tried to fix any references to it here, but if you see anything that references a table or something "below" its just talking about a table of all the different items in the game that is not included here.)

The table on the observable website contains the dataset I used. It was manually recorded and gathered. I originally input the item names and information just from looking at the collections menu in-game, but when I reached some plants, I realized I didn't know their names. I ended up pulling up my save file, which included a list of almost every item from the game.

While I did use the save file's official names for many of the plants, other items still use whatever I happened to name them (for instance, "Easter Island Head"), and there are a few names in the save file that I couldn't match to an in-game item, (for instance, "Tall Weed"). If anyone has any corrections to the data, please let me know.

Data Categories
I would like to note that some "Type" labels are not entirely clear in what they mean. Some of them match in-game icons, others do not. These include the following:

  • Fence: Items that connect together. These are denoted in-game by a symbol that looks somewhat like a lowercase lambda (λ).
  • Environment: Items that, when interacted with, change the environment somehow. These are denoted in-game by a symbol that looks like a small abstract picture of a mountain.
  • Water: Items that can water plants. These are denoted in-game by a small water droplet symbol.
  • Critter: Items that attract little animals. These are denoted in-game by a symbol that looks like a little frog face.
  • Storage: Items that can store other items. These are denoted in-game by a small cube symbol.
  • Interactive: Items denoted by a dot in-game. These are often items that have other interactions or effects, such as the plate, shrines, and altars.

There are other "Type" labels that are not directly denoted or are amiguously denoted in-game. These are:

  • Plant: Items that can be planted in tiles, planters, or bushes.
  • Planter: Pots that plants can be planted into.
  • Tile: These are the square or sloped tiles that most other items can be stacked on top of.
  • Light: These are items whose purpose is to emit light and can be turned on or off.
  • None: These are items not denoted by anything in game and that do not have any other category. These are things like tables, chairs, the garden hose, gnomes, etc.

Anomalies + Liberties
Since the data entry was manual and I was somewhat guessing for some items, some labels may seem inaccurate or slightly off. Most of these misjudgements will be in the item names (once again, "Easter Island Head" and "Pillow Cushion") and variation (One of the puffly flowers may be white instead of yellow), but some may be in the Type section. There were a number of items that I feel could have been labelled as Lights that I opted not to. These include: the string of fairy lights, the houses, and the barbeque.

Lights
I opted not to label the fairy lights as Lights for a few reasons. Firstly, they were already labelled in-game as a Fence, and I didn't want to override what was canon in-game. I could have adjusted my system slightly to allow for multiple "Type" tags on an item, but I didn't want to adjust everything just for a single item. I may end up doing this in the future if more items like this are added to the game. Secondly, I am fairly certain the fairy lights do not actually emit light. They are bright and appear like the are lit, but they do not emit light the same way a lantern does. Thirdly, There is no way to turn the fairy lights on and off. Star Lights are also not labelled as lights for the same reasons.

I think the houses and barbeque have a much better argument for being labelled as Lights. The barbeque can in fact be turned on and off and does have some sort of flame/light element, but I opted not to include it on account of illumination is not its primary purpose and, like the fairy lights, it does not actually emit light. If you place a pot on top of the barbeque, the bottom of the pot does not light up, and the tile under the barbeque also does not light up. If you place a pot above something like the fire pit, you can see the bottom of the pot or something in the pot light up.

The houses could truly go either way. They can be turned on and off, and do illuminate other tiles around it. If you place a pot directly in front of a house, you can see it light up. The only point of contention would be whether or not a house's purpose is to emit light. Technically, in real life, a house's purpose is not to emit light to the space around it, it is just to provide shelter and a place. However, in a creative space like Garden Galaxy, it could be argued that illumination could be an artistic purpose for a house. I ended up leaving the houses unlabelled as I felt odd calling a house a "Light."

Planters
After update 1.0.10, players were now able to plant plants into things like hedges, bushes, and ball trees. I still decided not to label these as planters because they were plants that could stand on their own. However...

Plants
I opted not to include things like trees, bushes, and hedges in the plants section, not because they were not plants, but because they didn't behave like plants. They could exist on their own on pavement and wood boards without a plastic/cardboard carton and watering them does not make them grow. What I considered "Plants" would equip a little cardboard or plastic carton when being moved, and would sparkle and eventually grow after being watered.
Graph: Number of Items in Each Collection
This was the first chart I wanted to make, to find out how many items are in each collection. As of the bounty update the collection with the largest number of items is by far the Rainbow collection, with the Market collection not far behind. They each have 8 or more items total than the other collections.
Graph: Amount of Each Item Type in Each Collection
The following two graphs show how many of each type of item are in each collection. For instance, what fraction of the Water collection are Lights.

The first graph isn't great for showing exact numbers but it's interesting to kind of get an idea of the types of items each collection.
The second graph is better for comparing the amount of each type of item across collections. For instance we can see very definitively that currently the Rainbow collection has the most interactive items, and the Market collection has the most number of un-categorized items. (Note that in this graph the collections are not in the same order as the previous graphs. They are in alphabetical order rather than the order they are in in the game menu. I'm currently trying to fix it.)
Graph: Frequency of each Item Type in Each Collection
This graph shows how many of an item type (y) are in a collection (x). The larger the dot, the more that item type exists in that collection.

I will add more graphs if/when I make them.

A lovely read, thank you. What a grossly underrated post.
