Another information I think it's good to add is that both races were crashless (no resets, no flipping, no spinouts)
I can't understand why Canyon is better because, from my races (in which I try my best!), Canyon achieves slower times. For testing, I would restart the race until I believed I could achieve the best time possible with the car.
So far I only did Canals 2 (evening map). On that map, I found Vexter to achieve a 12 second faster time than the Canyon.
This is, however, a perfect scenario. In case of both cars I had experience to both outrun cars and dodge obstacles without losing speed. I can imagine that if anything went wrong, Vexter's time could suffer.
