I found that a Narnoo UTE with a flatbed makes a very good shopping vehicle. The flatbed significantly increases cargo capacity compared with the standard bed.

My towing vehicle is a Jingu with a modified CV8. Only 366 hp, but 1084Nm. 4WD. Gearing set up mainly for acceleration, which is better for towing as you don't need or want high speed when towing. Top speed is only ~140, but it'll get there very quickly towing anything. It's complete overkill for towing.
If you have the turbo DLC (which I very much recommend) you can jazz a CV8 up to ~700 hp and >2000 Nm. A bit less is more useful though, because with that setup you're going to have traction issues.
A CV8 with sports parts and a low profile supercharger is a solid choice for a budget racing car. You can build a highly competitive Walea for ~$25K.
