N = Nitrogen
N Target shows the nitrogen needed for best yield.
N Reduction shows how much nitrogen you lose after you harvest.
OVERFERT shows that the mentioned crops can be overfertilized without any penalties.
HARVESTFERT shows that the mentioned crops can be fertilized even when they are ready to be harvested.

pH Table
Best pH levels for each ground type.

Crops you can fertilize even when ready to harvest:
Grass/Meadow grass
Soybeans
Poplars

Crop that are immune to over fertilizing:
Grass/Meadow grass
Soybeans
Potatoes
Sugarbeets
Poplars
