There are horses in RDR 2 which are superior to other horses because of their stats and physique. But even though they have good stats some may have some drawbacks. The following are the examples of some good breeds of horses and their stats.

The Missouri Fox Trotter which has the stats Speed Base 7, Accel Base 5.

In Chapter 2 in the mission “Exit Pursued by a Bruised Ego” Hosea will lead you to a stable where you can check the War Horse and buy it for $0. The War Horse Adrennes can be bought for $0 if you have the pre-order bonus. The War Horse has good stats.

The last way is to enter a cheat code in the Cheats menus. The cheat code will spawn a War Horse in Red Dead Redemption 2 near you. But the cheat code to spawn the horse can be found printed in a newspaper after the epilogue.
