Mechs do the same thing when engaging at range. Run perpendicular to your target, torso twist and shoot. Turn AWAY from your target and spin your torso all the way around the other direction. Now make another pass. Rinse and repeat - this is an effective way of keeping your distance while making yourself hard to hit.
Personally, I find a constant throttle much simpler to handle. If you need to turn sharply or focus on your aim, cut your throttle partway. With throttle decay it's harder to maintain your momentum while thinking about other things.
It is not necessary to max out your armour. Depending on what you're piloting, you might want to tank hits or you might want to jump away when targeted.
CT or Legs? Nah. Aim for the arm and destroy that big AC/20 that's cutting you up.
