Foreword
This guide is by no means a steps by step walk-though, but more for a tips & tricks guide based on my experience in playing the game. I am not an expert in this game, I just want to help other players complete the Easter Island Mode. This is my first guide so please go easy on me.
Starting Out
Don't be intimidated by the difficulty setting of Easter Island, although it's set to the highest difficulty. It actually starts off on the lowest difficulty with disasters turn off. The game will introduce those later and slowly ramp up the difficulty based on the objectives completed and years passed in-game.

The Beginning

When you start the map you'll be greeted by a brief story about our islanders. And start off with over 200 population and some buildings, a few fields and 3 technology points. You'll only start with five seeds (Peas, Pumpkins, Oats, Flax and Agave) and no animals. This is fixed.
For orientation's sake, North is where the statues are, South the ocean and East and West respectively.

I suggest pausing the construction of the statues (Objective) even with the abundance of man power. If you've read the introductory message, it gave us a hint that we'll run out of supplies in 2 years.

Here's the most immediate problems we need to address in order of importance.
  1. Medicine & Health
  2. Happiness & Stress
  3. Getting Livestock

Herbs your Basic Medicine
Upon starting you should have exactly 3 Technology Points, put them all into Agriculture and get the Herb Knowledge. RNG plays a role here and just hope you get the herb seeds early. Don't disable the various Gatherer's Hut dotted around the map for now, the more of them there are the more likely it is to get Herb seeds. In the best case scenario, you should have got them by the third year.

If luck isn't on your side and you've run out of herbs with no seeds on hand and you overall citizen health and fertility rate is dropping. I can not empathize enough how hard growing a population that refuses to procreate. Your Settlement's population & production will basically grind to a halt that it's faster to load a precious save or starting over is faster, rather than waiting and hoping for that herb seed.

Staues for Stress Relief
Let's ignore the fact that you have a lot of homeless islanders, they won't complain ... well not just yet. In the Blueprints construct all three of the stone statues, the small, medium and Moai Stone Statue. These statues reduce your city stress by 10% giving you a total of 30% reduction in stress. This should counter stress just enough so that your islanders will still be productive and not kill each other. Also it's never too early to get the Police Station Tech. This building provides a happiness boost to houses in its radius as well as notifying you of murderers.

Hunter's Hut & Livestock
It would be best if you demolish the two Hunter's Hut on the west side of your settlement, they won't be very productive there. Instead reposition them on the north and south of your village, I left those places for Apiaries, Forester's and Gatherer's Huts. Those are the places where wild animals tend to wander. There are three animals you can get; Alpacas, Buffaloes and Turkeys. I'm not sure if it's all RNG or scripted. But I always get Turkeys first, then Alpacas, and then Buffaloes.

A Few Important Notes
  • DO NOT DEMOLISH THE BREWERIES. You won't have access to the Brewery tech and you can't build more of them. So, just turn them on/off depending on your needs.
  • Expand Eastward, hug the foot of the mountain. You'll need to be somewhat close to the other end of the Island for an easier construction on the next phase of the statues.
  • Don't build houses just because someone wants it. Expand only when your production can support it.
  • The last Upgrade for the Mines & Quarries, The Deep Mine & Quarry have UNLIMITED resources. Just in case you missed that part like I did.
"Early-game" The 1st, 2nd & 3rd Statues
At this point your settlement should be stable. I would suggest to start construction of the objectives no later than Year 10. As the years go by the game will slowly ramp up the difficulty

There are 7 Statues that needs to be completed, and each statue has three phases of construction;
  1. Phase One: Chiseling (Construction)
  2. Phase Two: Moving (Resource Dump)
  3. Phase Three: Setting up (Construction)
Phase one and three is pretty self-explanatory. It's just elbow grease and a lot of manual labor.
In Phase Two, you need two techs; Reed Farming & Knitting. You'll need a lot of rope and timber.
And in Phase Three, the construction part will be on the Eastern most part of the island. If your settlement is nowhere near the construction site, pause it again and expand enough so that your islanders won't risk dying of hunger, thirst or cold.

Before you complete the first statue, make sure you have the Sawmill tech and a stock of at least 20 planks. Because at the completion of each statue will be a dilemma.

First Statue
Wood Plank
The First Stone Statue has been built, and the priest suggests using the ancient ritual script to record the great move. Do you want to record it on the wood planks?
Yes
No
Happiness + 20
Happiness - 20

Second Statue
A Plague or Rats
Without enemies, the rats on the island are rapidly multiplying. As a result, the fruit trees cannot produce food and the rats are eating the tree seeds. Would you consider eating rat meat?
Yes
No
Heath decreases
Growth rate of trees and plants decreases
If you picked "yes", then your Hunter's Huts would now produce Rat Meat that will reduce the heath of anyone who eats it. In exchange for faster wild tree and plant growth rate, hence higher production for Forester and Gatherer's Huts.

There are two ways to negate the unhealthy effects of the Rat Meat:
  1. Cook it at the Barbecue House using Domestic Fuels.
  2. Disable or Demolish all Hunter's Hut. No Hunters = No Rat Meat.
The second option seems dishonorable, a bit cheesy in a way but it doesn't seem to affect the the overall growth rate of trees and plants.

Third Statue
Construction Fever
The propagation of doctrines will strengthen religious beliefs and double the construction speed of the statues. Do you want to start the propagation?
Yes
No
Every month there are workers dead from hard work.
No effect.
"Mid-game" 4th & 5th Statues
After completing the third Statue or you reach year 25, the game will now throw disasters at you. This can be anywhere from simple nuisance like Fires, Droughts, Plagues, Pasture Plagues, and Blizzards. To full on Town wrecking Natural Disasters like Sandstorms and Tornadoes. It's all seems randomly generated. But keep an eye on the upper-right corner of the screen, the time-line.. bar.. thingy. It will tell when a disaster is about to hit. It's the most accurate news forecast out there.

If you haven't yet built a shelter, you really should start building a shelter. It's at the Blueprints tab and costs 100 Cut stone & Iron Ore and built at the side of a mountain. You can only build one, so consider putting it a at least somewhat central location. Don't worry your entire population can fit in there.

The shelter SHOULD ONLY be used for Tornadoes and Sandstorms.Food and Water isn't stored in there, meaning some might die if you called them in too early or released them too late.
I'm not entirely sure, but both disasters spawned at south-west corner of the map, that's all water. So It will take a little more time before it hits. You can call you islanders to shelter right when the Tornado is near the coastline. and release them as soon as it's behind the mountains.

Also prepare the handle all sorts of plagues and diseases. It's highly advisable that before completing the Fourth Statue that you finish research all the medicine related technology. Upgraded your Clinics to Hospitals and have Pharmacies with a stockpile of Medicinal Oils.

Fourth Statue
Incoming Merchant
A merchant ship from the ocean has arrived. They brought some sheep and want to trade with Easter Island. Do you accept the trade?
Yes
Refuse
New livestock: Sheep, Dock & Grocery Unlocked
The merchant leaves and will never arrive again

Before you construct your first Dock. Make sure you have enough stockpile of medicines and you have researched appropriate technology to handle yearly occurrence of plagues and diseases.
Because aside from plague outbreaks that come from the disasters, every time the merchant ship arrives at your dock it's going to infect you settlement with a plague.

Fifth Statue
Incoming Colonists
A group of colonists have arrived and burned the planks for recording. The villagers lose happiness. Do you want to deport them?
Hospitality
Deportation
The colonists carry plague.
Some villagers die if desperate resistance.
"Late-game" The 6th & 7th Statue
By this point you Settlement should be able to weather any storm and require very little guidance.
All there is to do is a sprint to the finish.
To save yourself the hassle, make a dedicated save file before the completion of the sixth statue.

Sixth Statue
Birdman Warrior
The priest proposes to carry out the Birdman Warrior Event to find the strongest warrior of the tribe. The event has risks, but those who survive will bring good things. Do you want to hold the event?
Yes
No
Can get coral and obsidian.
No effect

Whatever you chose won't have any effect on you Settlement. But rather the achievement you get upon completing the last statue.
Yes
No

Seventh Statue
Congratulations You've completed the challenge.

I would like to add video guide to let you see what avenged800 guide was all about and add few tips of my own. We are all here to help each other out and succeed in this difficult mission. I focus on technology, placement of buildings, manual tasks and so on... https://youtu.be/Piwk0XWIWZc - its still uploading and it will take some time to process but have a look at it.

"DO NOT DEMOLISH THE BREWERIES. You won't have access to the Brewery tech and you can't build more of them. So, just turn them on/off depending on your needs."

SOLUTION: SHIFT + LEFT MOUSE BUTTON CLICK to build any existing building, on this mission remember to make more breweries.
