How to get the "Satori" katana
During The Heist, play through the mission until you reach Yorinobu's hotel room.

Once T-Bug dies go upstairs and wait for Jackie to tell you to go to the AV.

You will get an optional objective telling you to get to the AV.

Follow the marker, eliminate the enemies, then interact with the AV.

You will now have to iconic "Satori" katana!

It's Katana of Saburo, not Yorinobu

It's his father's sword, Yori has a pistol which is on his bed side table or in that area
