Introduction
So the point of an airstrike is to rain explosives on your enemy. Two classes can do this both easily and well. Those two classes are Soldier and Demoman. But, they both accomplish this in very different ways. We'll start with the soldier.
How to become an Airstrike as Soldier
So the first thing you want to do to become an Airstrike is to equip the proper items. You will need the following weapons:

Air Strike or Beggars Bazooka
B.A.S.E. Jumper
Any Melee (Preferably the Market Gardener)

Because of how the Air Strike works, you will need to do kill as many people as possible to get the largest clip size possible. That way, you can rain as much destruction as possible.

So now that you have the stuff equipped, you can get to Airstriking! This is a process similar to
being a Troldier because to play this subclass properly, you need to be good at rocket jumping.

Step 1:
Rocket Jump

This step is self explanatory. If you know how to rocket jump, you can do this.

Step 2:
Open your Parachute

You can do this by pressing the jump button if you didn't know

Step 3:
Aim and Hold Shoot

If you are using the Beggar's Bazooka, make sure to let go of shoot before you blow yourself up. The last thing you want to do is to self destruct in the middle of bringing destruction.

Step 4:
Close your parachute and land

It is important that you close your parachute because with your parachute open, you are an easy target for Snipers. To minimize your risk for dying, CLOSE YOUR PARACHUTE!

Step 5:
Run away, reload, restock, and repeat

Don't reload when using the Beggar's Bazooka because you will waste your rockets. Go to the nearest Dispenser or Health and Ammo packs. If you don't heal, you might die trying to Rocket Jump. If you don't restock, you might run out of ammo in the middle of shooting.

If Soldier isn't your favorite character, or if you don't like how his Airstrike method works, then don't worry, you still have another character!
How to become an Airstrike as Demoman
As usual, the first step is to equip your items. This time, you have a few more choices for bombers.
You will need the following weapons:

B.A.S.E. Jumper
Stickybomb Launcher, Quickiebomb Launcher, or the Scottish Resistance
Any Melee (Preferably the Ullapool Caber or any other Melee without passive downsides)

All of the Launchers work similarly, but are more useful in different situations. If you want to kill things faster, use the Quickiebomb Launcher. If you want to destroy stuff better, use the Scottish Resistance. If you want a middle ground, go with the Stickybomb Launcher. Your melee doesn't matter much, but the Caber is both funny and fitting.

Now that you have chosen how you want to play, it's time to learn how to play.

Step 1:
Sticky Jump

Feel free to use as many Stickybombs as you want, as long as you stay alive. More height means more air time.

Step 2:
Open your Parachute

If you read the section on Soldier, you will know how to do this.

Step 3:
Aim where you want and fire

Make sure you don't hold the fire button, because you will charge up the sticky bombs instead of shooting them, and that wastes time. Instead, spam click the fire button to shoot as many Stickybombs as possible. Also make sure to spread out your sticky bombs so that you can hit many things at once.

Step 4:
Close your Parachute

Snipers are a problem regardless of your class. Watch out.

Step 5:
Run away, reload, restock, and repeat

So now that you know how to do this as the two classes that can do this, It's time to give you a list of maps that you should and shouldn't play this on.
What Maps should you play on and what maps should you not play on?
Picking the right map is very important. The map you choose can make or break this subclass.

A general guide is to avoid maps where you are inside a majority of the time, like in Turbine. If the map takes place in large, open spaces with a lot of room to rocket jump, like in Hightower, go ahead. Also, just don't go to DeGroot Keep.
Conclusion
Now that you know how to become an Airstrike and a general guide of what maps you should play on, you should go ahead and fulfill your dreams of becoming an Airstrike, if you had them!
