I actually do 2 of them immediately, fully upgraded and staffed and set the import orders high enough to supply both. You can have your own production of cherries, eggs and flour (or not). Just keep those buy orders no matter what to ensure the bakeries never stop pumping out money. After doing this I always have more money than I can spend, if I have enough harbours.
The trap is to beeline bakery and try to get the whole supply chain going from your own production. It certainly can be done but its a lot of setup as you said. It is better at that stage of game to put more labour in the Apiary, or making decorations at Carpenter or build a second or third clothes shop.
