What I did personally was every other level or so I'd exit, Sleep a day to save my progress (all without dying or if I died I'd exit to the Stardew menu and reload), and continue until I reached the boss level where I again slept a day after reaching, then basically just did this.
I also found strafing like in a FPS game helps in different ways of trying to beat him because he aims for where you're going to be most of the time and not where you are .
