Introduction
Welcome. In this guide I'll show you how to mod LUFTRAUSERS to get those pesky achievements you're missing.
It involves a bit of "modding", however, it does not affect your Steam profile (VAC bans and such) or global leaderboards.
This method is working as of 11/08/2021 - I can't guarantee it will work further down the line.
Normal achievements
These achievements are fairly simple and you should get them over the course of normal playthroughs.

SMALL SCIENCE:
Unlock a part.

BIG SCIENCE:
Unlock all parts.

EXPERT RAUSER:
Become a feared level 10 rauser pilot.

To unlock parts, you have to complete challenges with different plane combinations. To earn this, just play the game normally and you should earn them soon enough.
First you must use the original plane to unlock the first ones, then switch to unlock the rest.
With enough time, playthroughs and kills you should also level up in no time. All it takes is a bit of patience.
Kill achievements
Allright, so this is where it gets a little bit tricky. A few of these you should get through normal playthroughs but some others include harder enemies - some are pretty rare to find too.
To make it a bit easier we're gonna edit a few parameters from the game. See below for further info on this topic.

AIR SUPERIORITY:
Outsmart an Ace.

SEA SUPERIORITY
Sink a Battleship.

UNDERWATER SUPERIORITY
Destroy a Submarine.

SERIOUSLY, DONT MESS WITH THE RAUSER
Sink an Acemarine.

YOU WERE RAISED
Take down a Blimp.

DONT MESS WITH THE RAUSER
Defeat a Laser Ace.

A few of these achievements should be pretty straightforward - after a few runs you should encounter most of these and through trial and error defeat them. However, some of these are very strong and will take some heavy punishment. How do we beat this problem?

By modifying the game's values.

First right click on LUFTRAUSERS on your steam library and click "Manage". Then, "Browse local files".

You should see two folders, BIN and DATA. The files you are after are:
  • enemies.json - found in the DATA/RES folder.
  • enemies_sfmt.json - found in the DATA/RES folder.
  • player.json - found in the DATA/RES folder.
  • projectiles.json - found in the DATA/RES folder.
  • spawncoordinator.json - found in the DATA/RES folder.
  • spawncoordinator_sfmt.json - found in the DATA/RES folder.

You can open these files by right clicking them and clicking on "open with". Then, select notepad.
Now you should see something like this:

In order to make your life easier, we're gonna make our enemies weaker.
Find the "health" line in enemies.json and change the number for each enemy type. For example, Blimps have 600 hp, which would take around 150 shots from the default gun. However, by lowering 600 to 6 it should take just 2 shots. This technique should be enough to make most kill challenges and achievements easier.

However, some enemies have very low spawn rates - like the AceMarine, that has a 0.3333333333 chance to spawn for each Submarine killed. To change our luck we must edit the spawn rates in the spawncoordinator.json file.

By changing the 0. to a 100. you should increase most spawnrates to pretty much guarantee rare enemies such as Laser Aces or Blimps in every run.

You can also modify the order in which enemies spawn by default. Down in the "spawnlist" section you should see something like this:

You can change the enemy type within the "quotation marks" to the ones you desire, however, some types can crash your game upon spawn (such as AceMarines). This is extra useful for some challenges (For example the "killing 3 submarines in a single run" ones).

NOTE: Each mode has a different spawnlist and properties. For example, if you wish to modify the enemies in SFMT mode you must edit the enemies_sfmt.json file instead of enemies.json
Grind achievements
Now that we know how to make our lives easier by weakening the enemy, we have a few 'cheevos left. Most of these involve a fair bit of grind - be patient and you will be rewarded.

WHAT DOES SFMT STAND FOR?:
Survive SFMT long enough to hear the end of the air alarm

This one is somewhat on the easier side of things. Remember to edit the SFMT files and not the default ones. Weaken the enemy HP / damage and you should be ok - all you should do is survive for around 15 seconds. Stick to the skies where boat and sub projectiles spread out more to improve your chances.

MASTER RAUSER
Beat all missions and launch the [CLASSIFIED]

Each part has different missions / challenges to beat along with other ones you can only do in SFMT (once you beat the ones in normal mode). Same old story - weaken enemies and change around the spawn list to beat each one of them. For example, to beat the "kill 3 boats in a single combo" challenge just set the spawnlist to only boats. Also, keep in mind that the nuke body is very effective for a lot of challenges (like killing a lot of a single strong enemy in one life/combo). When in doubt, equip nukebody.

For the score missions, to make it even easier you can set the "difficultyweight" value in enemies.json / enemies_sfmt.json to your valued desire. Once you kill a single enemy of that type, you should be awarded enough score to beat those missions.

Once you complete every single one of them you unlock the URAUSER. It needs all 3 parts equipped at the same time and it does not count towards the SEEN IT ALL achievement.

SEEN IT ALL
Pilot all 125 Rauser combinations.

Allright, so this one is pretty tricky. You have 125 different planes to equip and no way to keep track of them after a few playthroughs. However, fear not, because there is a way to find out which ones you have not tried out yet.

First you should search for the dex_Log.txt file in the BIN folder. This file renews every time you launch the game, so I recommend you play a few runs first and then open the file while the game is open.

In the lower part of said file, you should search for something like this:

The "combination" variable tells you the specific plane you have played as and the amount of times you selected it. It shows you ONLY up to the highest combination number that has you haven't played yet (0 launches.). For example, in the picture shown I've played every single combination except the number 81.

"But how do I know which one the number 81 is?"
Every plane part has an assigned value.
Weapon: 0 (original), 1 (laser), 2 (spread), 3 (missiles), 4 (cannon).
Body: 0 (original), 64 (armor), 128 (melee), 192 (nuke), 256 (bomb).
Engine: 0 (original), 8 (superboost), 16 (gungine), 24 (underwater), 32 (hover).

In order to reach the number 81 we should add up the body parts - laser (1) + armor (64) + gungine (16) = 81.

This leaves us with a combination we haven't tried out yet, the "Ground Control".
Play a few runs with said plane until it logs (it takes around 2 / 3 runs each) and repeat until the file updates showing you the higher combinations missing.

NOTE: Random parts count, and SFMT runs count too.

Diffchecker[www.diffchecker.com] is an useful resource to compare different run values to check which ones you already did and which ones you are missing.
Conclusion
With these few little tricks you should lower considerably the difficulty ingame along with better resources to keep track of other info.
Keep in mind you can revert these changes ingame by modifying the game files (although I recommend you keep a backup just in case) or just reinstalling. This does not issue any sort of ban on Steam, it does not prevent you from earning achievements and it also does not allow you to upload scores to the leaderboard - so don't feel guilty for killing a 1.000.000 point tiny fighter plane.

I hope you enjoyed this guide and if I helped you get that 100%, leave a like or something.
Feel free to suggest changes to it, too!

Ok, so this guide has been very helpful for the most part. However, I think modding the game has made it sort of glitch out where it won't keep track of what combos I use. I may uninstall and reinstall to make sure all the game files are as they were to see if that fixes it.

you can increase your health in player.json, at the line 131 you will have "maxhealth" : [VALUE HERE] - edit this

it actually *is* possible to increase survivability, it's just stored in a somewhat obscure way. sensible, once it clicks, though.

the bodyparts section of the player.json seems set so that the "Original" bodypart sets a baseline of stats, and then anything after Original just inherits Original's numbers for any stats they don't specify. for example, Bomb doesn't specify a maxhealth, so editing Original's maxhealth will effect it, I happily ate several simultaneous battleship salvos to the face that way; however, Bomb *does* specify a lower healingspd, so buffing Original's had no effect on Bomb.

with this understanding, one can easily add stats to the other bodies as desired. it's just very *very* important to only put them at the end of a section, *or* always ensure every line (except the end of a section) has a comma at the end; without the comma to tell the game where one stat ends and another begins, it will straight up crash.

@MaxDuo

I have tried to no avail. I've changed settings like plane HP and such but it still goes down in a few hits.

Is there a way to increase your own HP? Most of the time I just end up wishing I could've taken 1-2 more shots. I wouldn't want to just make enemies super easy to kill :( (though maybe at least make the blimp not just be a bullet sponge..... it feels more annoying and tiring to beat one......)
