The Solution
Hi Everyone!

This guide is aimed to help people who are trying to 100% the game but are having trouble with some of the achievements that require a specific action to be completed x amount of times.

As you may have noticed during your playthrough, We Are The Dwarves is really inconsistent when counting your progress in certain achievements. After some experimentation I have found that the game's tracking turns off when you load your game. This definitely happens when you 'Load Last Save' and I suspect that the simple 'Load' option also messes with the internal logic.

When you are trying to farm kills or deaths it is important that you do not load back your save, instead you should quit to the main menu and then quit the game entirely. When you re-launch the game game, simply press 'Continue' to get back to where you left off.

This means that if you want to make sure you complete the following achievements you will probably have to stop your playthrough, plop down a save and grind with the above method 'till the achi pops.
Achievements
All the kill achievements can be obtained by this method, I have only listed the highest tiers:

Kill 100 Whistler Pirates

The whistlers are the smaller pirates more common in Chapter 1. Forcer has a few good stages where you can farm them.

Kill 100 Sludge Workers

The bug-like aliens can be found throughout the game but are more common in early Smashfist levels in Chapter 1.

Kill 50 Fishman Pirates

Fishman are the bigger pirates you will encounter in Chapter 2 in nearly every level.

Other achievements that could be affected by the game not counting them:

Different enemies races kill each other 25 times

You have to find two groups of different enemies and lure them together. They should start killing each other prettymuch immediately. Chapter 1 is a good place to grind this one as you can find indigenous creatures as well as pirates/bugs on a few stages such as 'Terra Incognita' and 'Full Force'.

Resurrect your ally for 10 times

Says it all on the tin. Once you have 2 dwarves together just have one kill and resurrect the other. If the achievement is not popping just quit and continue your game before trying again.

Hide from 3 enemies

Once you get Shadow in Chapter 2 you can more easily try for this one. You don't actually have to hide from 3 different enemies at the same time. You just have to make sure that the enemy chasing you gives up their search. Again to make extra sure the game counts your efforts, be sure to "reset" before trying.

Hidden Achievements
Some hidden achievements are also tied to an ingame counter:

Get caught by Sand Hunter for 7 times

Have a burrowed Sand Hunter catch a dwarf 7 times. Pretty simple, "reset" and try again if the achievement won't pop for you.

Get poisoned by Acid Worm for 7 times

Have an Acid Worm poison a dwarf 7 times. The above best practice applies here as well.

You have died 50 times!

Probably the reason why you found this guide in the first place. The janky ingame logic makes this achievement a pain to get as you have to get to the game over screen 50 times. Each time you get a game over you have to quit the game and re-launch it for it to count, if you only reload the save, the game will stop counting your deaths. Once you know this little trick, farming this achievement becomes trivial, albeit tedious. For efficiency, I recommend the first level of Chapter 2. Just set up a save after you kill the first 2 enemies with Shadow and start running into the pirate base. You'll get it eventually.
The Rest of the Achievements
As far as I can tell, other achievements are not affected by the weird ingame counter, as those are either tied to states/collectibles or specific actions performed only once. In any case, if any of the achis that are supposed to pop are giving you trouble, now you have a best practice to try.

Small addition regarding "More dead than alive": Force closing the game (e.g. with Alt+F4) seems to prevent the counter from increasing, you have to do it via main menu. This suggests the counter is only updated in one of the last processes before closing which explains why there is no other way to unlock the achievement. It was the the last achievement I still had locked so I couldn't test it with any of the others.
